Tuesday, Sept 15, 2015 is about as dead as Las Vegas gets, so if You like it with small crowds this is the time. The crowds start coming in on Thursday but mostly Friday. Normal weekends, People are leaving on Sunday and on holidays such as Labor day, they leave on Monday. It is safe to say that all year You can arrive on Monday and leave on Thursday and have a very uncrowded experience.
